There is an entrancing atmosphere to Waterman’s – a sense of being drawn back in time to when convicts, whalers, traders, and fraudsters shared a ribald camaraderie along the then infamous Salamanca Place, now a national icon to Australia’s penal history.

The exposed sandstone walls of Waterman’s, crudely coursed by convicts more than 180 years ago, have borne stoic witness to the brazen and bawdy behaviours of the once disreputable Hobart waterfront. In places, the hand-sculptured walls are broken by small bricked-over doorways, which once served as escape hatches for those fleeing police raids on the adjoining public house where prostitutes, gamblers, and fist fighters plied their night-time trade.

Built in 1840 to house a ships chandlery, the Waterman’s building stood proud within a confluence of dockside warehouses, stores, and public houses all servicing the needs of a burgeoning port facility as well as the accompanying lust of hardworking sailors, wharf workers, and whalers. By the early 1900s, nothing much had changed. Salamanca Place remained home to some of early Hobart’s most notorious public houses. But none was more memorable than that which adjoined Waterman’s – Ma Dwyer’s Blue House, so named for its blood-letting nightly brawls. It was for the nefarious patrons of the Blue House that the escape doors through Waterman’s were created.

With the dawning of the 21st century, yet another page in the colourful history of Waterman’s was written. The top two floors of the building were occupied by a motley group of young men who spent their time in front of computer screens gambling on sporting events across the world. This was the birthplace of the David Walsh empire and the funding source for Tasmania’s world-famous Museum of Old and New Art (MONA).

Today, Salamanca Place is a refined, international drawcard – a charming cosmopolitan precinct hosting restaurants, bars, art galleries, and gift shops. On Saturdays, it is host to the renowned Salamanca Market. At the very heart of this entertainment enclave is Waterman’s – an enchanting hotel combined with a first-class restaurant, bar/lounge, and function facilities.

Poppedvin for lunch and dinner here, lovely food at good prices and wonderful friendly staff

Fantastic food! Pork cutlets were succulent and served with beautiful mash and vegetables! Hubby had lamb shanks and was also impressed.

We had such a great night there. The live music was just great. The singer / guitarist was amazing! Food was good and service friendly. Some people got up and danced and added to the fun.

We wandered Salamanca Place trying to choose a place for dinner and the menu of this one, plus the ambience drifting out to us in the form of some good motown music, seduced us in. Immediately, the staff welcomed us in. We both had fish and chips. The fish was so fresh that I did not bother using the tartare sauce (used it on the chips instead). They stocked a lovely local cider too. Definitely worth visiting.

We are travelling from QLD and met a group of friends for dinner and drinks at Waterman’s. From the moment we walked in, the service we received from Lily was excellent. She was so friendly, welcoming and accommodating. As it was happy “hour” the drinks were well priced. My husband ordered a Wednesday night, steak special, which included a pint of beer 🍺 . He was very impressed with the meal (he’s hard to please), so 5 stars for me not having to listen to him whinge! As the night progressed, I ordered a few cocktails. All of these were amazing. My favourites were the Gin Cocktail and the Salted Butterscotch Cocktail - both delicious! Paul then brought me a Hot Island Buttered Rum to try. This was like drinking an alcoholic Maccas Apple Pie. It was hot. It was spiced. It was a perfect cocktail to drink on a cold Hobart night. I loved that it was made in a “cauldron” We will definitely be back to The Waterman’s Hotel.

We came for the happy hour $15 cocktails. Can recommend the French martini as our favourite but all of them were delicious. Good service too

Had a terrific evening with Paul and the team. I enjoyed an Espresso. 😉 A local stout beer. The Parma was terrific on Thursday night. Make sure you check out the male toilet. It’s an interesting experience

While staying in Hobart I have been to dinner a few times here at the Waterman's Hotel I must say the service and the meals were very good... Great place def will come back next time in Tassie...

Went for a Sunday afternoon wander looking for a pint and place to chill, heard some awesome jazz and followed my ears. Good range of beers, amazingly talented musos and the sole server (Tom) is such a friendly chatty bloke. Wish I lived locally as I would make this my regular. But also... beware the urinal 🤣

The staff, atmosphere, and vibe were great. The food... not so much. Nor my long Island ice tea.

Had a chicken Parmigiana with chips to die for. Top it off with a pint of lager and a perfect lunch. Paul and Co were very knowledgeable and friendly and made you feel very welcome . It's definitely worth a visit, just a great old-time pub.

Having a few drinks then went to go for a quiet cigarette in their designated smokers area and was very rudely told to go into the street like a lepper due to noise restrictions (no signs posted that the outside smokers area was closed) Do not recommend.

Great food and wonderful staff. Happy to accommodate your needs whether food or beverage. Live music who interacts with patrons. It was my first time here and a great experience. Will be a first port of call when I come back to Tasmania.

I was with a group of 5 on a Saturday night. Admittedly it was close to 9 pm. We said that we wanted to eat and were shown to a booth and given menus. We ordered drinks and were then told that it was too late to order food.

We stayed for 1 night at $250 per night on a Sunday night. There's no one on site if you need customer service. The fan in our room started making a shrieking noise, my partner called to ask if there was a replacement fan and was told they didn't think they had one and there's no one on site. Worst of all we ran out of loo paper!!! They provided the last bit of a roll and no replacements, heaps of cupboard space in the bathroom. The window says you can open it but it was broken so we couldn't. The room is a bit rundown and could do with some touchups. Bed was comfy, bath was nice and a great location. Bar and restaurant were closed on a Sunday night. Paying $250 per night you'd think you could get some more loo paper!

The parmi deal is the best in Hobart

I really enjoyed going to this venue. The meals are reasonably priced and I enjoyed the steak. The vegetables that came with it were not the usual. Cannot remember the last time I had asparagus and broccoli at a restaurant. Fantastic.

DONT GO HERE!!! Myself and a group of friends dropped in for a NYE drink. The place was nearly empty at 11pm .. This is most likely why! Firstly I was waiting in line and the waiter could see I was the next one and ever pointed this out to his college that I was the next but he served the guy behind me. Eventually the first waiter severed me and said sorry for that. I ordered a cocktail at the same time as 2 of my friends. Sat down and minutes later they got their drinks. 2 other friends went to the toilet and ordered theirs after mine and got theirs too. After 30min I got up and enquired politely with the guy that served me. The lady making cocktails said what’s your problem … I’m just making it now. I said yes but others have had theirs made and delivered to the table after mine was ordered? She said nothing and slapped the drink down on the bar aggressively at me. I ask are you not even going to say sorry. She pulled a face and said .nothing . At this stage I asked for my money back. She said you’re not getting it. I then called over the guy that served me but she interrupted rudely and then said you are to talk to me!!! After she refused again to refund I left the drink on the counter. I walked back to my friends who just spent over $150 on drinks and told them what has happened. Minutes later a Middle Aged man with an English accent dressed in a Bright green calypso shirt approached me at the table with my friends and said he is your refund and I am going to ask you to leave. No sorry, No introduction to who this guy was. I asked him why as my friends were still drinking their drinks. He said I don’t have to give you a reason!!! Never in my entire life have I ever been asked to leave a drinking establishment . I was not rude .. I did not swear or abuse the staff… I did not raise my voice and was not drunk. My friends all got up in support and left with me. Don’t ever go to this place would be my best advice. Never have I experienced such odd behaviour . This will find its way to Facebook and Instagram tomorrow … You know what they say tell 10 friends and they will tell 100 others and so on. All could have been avoided with some go old fashion customer service and that ever disappearing word called SORRY! Kevin Spaulding New Town

Everything was exceptional. Staff. Food. Drinks. Do yourself a favour and make sure that you have the same experience that my family and I had.

Absolutely divine meals, scotch fillet cooked to perfection & grilled fish superb. Will definitely return before leaving the state on Monday 😋👌🏻

I've never wrote a review before but I had such an amazing experience here I had to share. I was travelling for work solo and left my family and 19mth old back home for the first time so i was having a hard few days away. What made the experience so wonderful was the restaurant and bar downstairs. The owner and staff were incredibly welcoming and kept me company when I was feeling blue, I cannot describe how kind and genuine they all were. I had the steak which was so amazing I had it again the night after, perfectly cooked and i noticed always brought out very quickly, a really short wait even though busy, I tried a few drinks as well which I highly recommend, Irish coffee, French martini and a caramel infused tequila, very tasty. I stayed in the rooms upstairs, which are beautiful and deserve a whole other review in itself. The perfect compliment to history with the preserved stone walls chiselled by convicts, making u feel like you have travelled back in time to the 1800s, but the comforts of modern fixtures and cosy bedding bringing a warmth that I really loved. All in all I will be bringing my family to Tasmania to stay here again, also a special thank you to the Watermans team for their kindness and generosity. R

Nice hotel on the classic dining strip, set amongst the heritage buildings is a handful of great eateries. Waterman's Hotel was my pick tonight, service by the staff was fantastic, food & beers were great. Will happily return next time in Tas

The Scottish man at the bar was very funny and perfect for our group, he was very knowledgeable about the area and very welcoming.

Very friendly service … a welcome change from an establishment not too far away.

Not as nice as we expected. We booked a room to stay in following the 3 Capes hike. We were excited about the bath and the photos even showed a washing machine. However we found no washing machine there, the bath tap didn't work so we tried to fill it with the shower but lost that battle due to a leaky plug. Other small things were just poorly kept. Joinery was broken in places, soap dispensers were empty. As there were limited hours we could phone the off site reception we were unable to speak to anyone about our issues. Clean space and Comfy bed though.

My wife and I just had a steak dinner, the steak was cooked perfectly for us. The meal was delicious, the steak fell apart, buttery smooth and the sauce was amazing. The service and location was also first class. Will definitely be back when we are in Hobart.

Outstanding pub, Outstanding service. Cocktails on point. Christie? Was an amazing bartender as were the staff that maintained the quality of service and quality of cocktails after her shift. The owner was present, socialing and an accommodating host. Would definitely recommend dropping in and sampling their cocktails and amazing service.

Eclectic, funky accommodation in the center of everything. Sparkling clean and comfy. Wonderful management and staff. Sure parking is a hassel but permits can be arranged with Waterman's. We managed without.

Wow, what a location and what fantastic service. We were made to feel very welcome by the the two owners Yarni and Paul and of course the staff. The rooms are a great size and the view was just beautiful. So much history in this hotel as I found myself often looking at the historic walls in our room that were made of sandstone bricks that the convicts chiselled out by hand and then built this amazing hotel. The room itself was lovely and had everything we needed. We loved the coded locked door that we initially enter to get access to the accomodation as it made us feel safer knowing only patrons could enter. We will definetly be coming here again.

What a top spot to stay in Hobart, the view from my room was fantastic. Just a walking distance to all the bars and restaurants. The owners Yarni and Paul were very helpful and looked after us with top notch service. Would stay here again.

Great Bar to chill out with friends for a few drinks & a bite to eat - staff very helpful and have time to have a chat

On holiday from Melbourne Dropped in with my wife for a beer. Stayed for 3 hours enjoying the atmosphere, food and variety of beers. Owner and staff very friendly happy to chat about life. We are going back to Hobart in June definitely will be dropping in.

Our room was great and in the perfect location however I wouldn’t call this accommodation a hotel. There is no staff or reception area. It is self check-in. Also I didn’t notice any reviews saying that there are no lifts. We had to lug our luggage up two flights of stairs.

Very friendly perfect for families me and my wife have a 1 year old and this place worked perfectly for us. Great service 👏

Good location but room was very noisy, could clearly hear the next rooms conversation and TV. Outlook from room was of exhaust fans. The room was warm needed to open the window so that increased the noise. Would have been good to have had luggage storage

Went there for lunch so can't comment on accommodation. Food and drinks were better value than most of Salamanca. Service was efficient and friendly. Loved the clever bathrooms. LOL. Apparently new owners took over Oct 2022 & they seem to be working very hard on customer service. Recommended.

My friend and I both loved our stay at Waterman's Hotel. A great location with anything and everything you could want in your room. An amazing huge bath with heaps of hot water, big comfy bed, little kitchenette, coffee pod machine, iron, ironing board, hairdryer...everything! A very efficient operation. The staff and the owner are very friendly and helpful. One side of the hotel is super quiet and the other side has an amazing view overlooking the Salamanca markets and water but not as quiet. Highly recommend and we will definitely stay there again. (They make a first class Negroni too!)

Our first room was dirty - used hair ties laying around, fridge was broken, thick layer of dust all over the furniture. The manager working changed the room for us on request. Our new room was better and bed was comfortable. Having no elevator was a bit annoying but manageable. Good location.

Clean, historical ambience. Staff went over and above. Pizza was amazing. Highly recommended 👌

A great venue and great beer and New Year's was great 🍺🍺 Note that the men's toilet is worth a visit for the one way mirror where you pee and watch people on the other side 🪞🪞

Would give 6 stars if I could. First time at Waterman's and a complimentary round of shots for our table from the manager. Doesn't get any better than that!!

I stayed here for 2 horrendous weekend nights 4 years ago, was promised a refund after a lot of hassle and it’s never been forth coming. The only good thing about it is the bar, the bar staff and the location of the bar. If you want to sleep at all on a Friday or Saturday night go elsewhere. Hard to park, stall holders wake you at 5. Clubbers are up until 3-4 am. The bedding was also dirty but that was pre-Covid so I assume they’ve lifted their game now. There are lots of fabulous hotels in Hobart, this is just not one of them.

We went there for a birthday out in the back area they used for the function room. It drinks were good and the bar staff were friendly. Didn’t go much on the cocktail finger food though. But that could just be me being picky as the people who I was with were happy with the food. Will certainly go back again for drinks.

Yum yum!!!! Chicken tenders are toff the chain! Mmmmmm. Awesome friendly staff, cool atmosphere and yummy snacks. Thanks waterman!

We loved it here. Great communication with owners and location was perfect to see beautiful Hobart. Recommend for any couple. No parking onsite, but the hotel made it easy to know where to go.
